Help: Adobe Illustrator | Printing services question

Greets..
Im working for my first time an Illustrator project that I need to use a photo.
The project has 1 barrier. I can only use two colors (Black and some Pantone Orange), to prevent huge pricing when it comes the time to print.
My doubt is: If I convert the photo to "Greyscale mode", the printing company printer (i think they all work the same way all over the world) will check the photo colors. When that happens, will it read the grey as black+white proportions?
a positive answer or another solution would be welcome =)
