Amason EC2 servers are located in Ireland. I had a webserver running there for armound 50-60 Euros.

Is it possible to get their IP address so the people can ping the server and see what the connection speed may be like?

Yes, please. I used too have a decent connection to the server in Germany but now I'm very sluggish. Additionally, is there a current way to check if the server(s) are experiencing latency?

Simple solution, bring back 3D then Americans whining about being slow can just use it. More Americans will keep using 2D just for the looks more than likely, the problem is Europeans using it and not needing to at all.
